How to Store Cupcakes: Counter, Fridge or Freezer?

The right way to store cupcakes depends mostly on the icing and filling. Cupcakes with plain buttercream can stay covered on the counter in a cool room for a day or two, while cupcakes with cream cheese icing, whipped cream, pudding or cheesecake belong in the refrigerator. Leftovers you will not eat in a few days can go in the freezer. This guide walks you through each option, so the cupcakes you picked up in Hope taste just as good when you serve them.

The Short Answer: Check the Icing First

Look at what is on top and inside the cupcake before you decide where it goes. The icing and filling, not the cake, decide whether it can sit out.

Cake by itself is a fairly dry, sturdy food. Fillings and toppings made with dairy are a different story. According to America's Test Kitchen, the FDA advises refrigerating anything made with cream cheese after two hours at room temperature, and frostings with other perishable ingredients like whipped cream follow the same rule. A simple butter-and-sugar buttercream, on the other hand, holds up at room temperature for a couple of days because it has very little water for bacteria to grow in.

Here is a quick way to sort an order from our menu:

Cupcake typeWhere to keep itBest within

The times in the table are for best taste and texture. When in doubt, refrigerate, and ask us about a specific flavor when you pick up.

Storing Buttercream Cupcakes on the Counter

Buttercream cupcakes keep best covered at cool room temperature, away from sun and heat. Keep them in the bakery box or an airtight container so the cake does not dry out.

Our standard sized cupcakes come in flavors like white, chocolate, lemon, red velvet, strawberry and yellow, with white buttercream, chocolate buttercream or SweetTart buttercream among the icing choices. If you are serving them the same day or the next, the counter is usually the better place for them because the cake stays soft and tender.

  • Keep the box closed and out of direct sunlight, away from the stove, dishwasher and windows.
  • Do not stack anything on top of the box; buttercream swirls flatten easily.
  • On a warm day, or in a kitchen without air conditioning, move them to the refrigerator. Butter-based icing softens and slides in heat.

Which Cupcakes Need the Refrigerator

Any cupcake with cream cheese icing, whipped cream, pudding, cheesecake or fresh fruit should go into the refrigerator soon after you get home. These ingredients are perishable, and the two-hour limit for perishable food applies to them.

On our menu, that includes:

  • Standard cupcakes ordered with cream cheese icing, including the classic red velvet with cream cheese.
  • The Jumbo Banana Pudding cupcake, filled with homemade banana pudding and topped with freshly made whipped cream.
  • The Jumbo Strawberry Cheesecake Stuffed cupcake and other cheesecake stuffed or swirled flavors.
  • Lemon-Berry cupcakes and others topped with fresh strawberries.
  • Sugar-free cupcakes, which come with sugar-free cream cheese icing.

The USDA Food Safety and Inspection Service explains that bacteria grow fastest between 40°F and 140°F, and perishable food should not stay in that range for more than two hours, or one hour when it is above 90°F. Keep your refrigerator at 40°F or below, as FoodSafety.gov recommends.

How to Refrigerate Cupcakes Without Drying Them Out

Keep refrigerated cupcakes covered in an airtight container or a closed box, away from strong-smelling foods. Cold air dries out uncovered cake quickly, and icing picks up odors from onions, leftovers and other foods.

  1. Keep them in the box or a tall container. A container that is tall enough will protect the icing. Avoid plastic wrap pressed on top, which pulls the decoration off.
  2. Find a flat shelf. Clear a level spot before you get home so the box is not tilted on top of a jug or dish.
  3. Give them space. Do not set heavy items on the box.
  4. Take them out before serving. Chilled cake is firm. Set buttercream cupcakes out for a short while before serving so the cake softens, but keep cream cheese, pudding and cheesecake cupcakes within the two-hour limit.

A tip from the same America's Test Kitchen guide: take out only the portions you plan to eat and leave the rest in the fridge. That way the leftovers stay cold and safe.

Can You Freeze Cupcakes?

Yes, many cupcakes freeze well if they are wrapped properly. Plain cake and buttercream freeze best, while custard fillings and fresh fruit toppings do not.

Land O'Lakes freezing guidelines suggest freezing frosted cakes uncovered until the frosting hardens, then moving them to a covered container, labeling and dating it. They list up to 2 months for frosted cakes and up to 3 months for unfrosted ones, and note that custard fillings and egg-white frostings do not freeze well. The same idea works for cupcakes:

  • Place leftover buttercream cupcakes on a tray in the freezer, uncovered, until the icing is firm.
  • Move them to an airtight container with a little room around each one. Label it with the flavor and date.
  • Remove fresh fruit and crunchy candy toppings before freezing if you can; they get soggy after thawing.
  • Skip the freezer for banana pudding and whipped cream cupcakes. Enjoy them within a day or two instead.

Freezing is best for leftovers. For an event, it is better to plan your pickup date close to the party so everything is fresh. Our guide to how many cupcakes you need helps you order the right amount, so there are fewer leftovers to store.

How to Thaw Frozen Cupcakes

Thaw frosted cupcakes slowly in the refrigerator, loosely covered, then bring them to room temperature before serving. Slow thawing helps the icing keep its shape and texture.

Land O'Lakes recommends thawing frosted cake loosely covered overnight in the refrigerator. Once thawed, let buttercream cupcakes sit covered on the counter for a little while so the cake loses its chill. Eat thawed cupcakes within a day or two.

Storing Cupcakes at a Party

At an event, keep cupcakes in their boxes in a cool spot until serving time, and set out perishable flavors last. Most storage problems happen at the party, not at home.

  • Bring the boxes inside first and refrigerate cream cheese, pudding and cheesecake cupcakes until you are ready.
  • Keep the dessert table out of direct sun. Outdoors in Southwest Arkansas, even fall afternoons can be warm.
  • Watch the clock. Put perishable cupcakes away or toss them after two hours out, or one hour above 90°F.
  • Label flavors, especially those with peanut butter, nuts or candy bars, so guests with a food allergy can choose safely.

Storing the Rest of Your Order

If your order includes more than cupcakes, each treat has its own needs. Dipped strawberries and fruit belong in the refrigerator, while cake pops, pretzels and Rice Krispy treats are sturdier.

For strawberries, read how to store chocolate-covered strawberries. Cheesecake shooters are dairy-based and should stay cold until serving. Gift boxes that mix cupcakes and berries, like our cupcake and berry boxes, are easiest to keep in the refrigerator so the strawberries stay fresh. Want to compare treats and packages? Frequently Asked Questions

How long do cupcakes stay fresh?

Cupcakes taste best within a day or two. Buttercream cupcakes can stay covered at cool room temperature for that time. Cupcakes with cream cheese icing, whipped cream, pudding or cheesecake should be refrigerated and eaten within a few days. For the freshest treats, choose a pickup day close to your event.

Should I refrigerate cupcakes with buttercream?

Usually not, if your kitchen is cool and you will eat them within a day or two. Room temperature keeps the cake soft. If the room is warm, or the cupcakes will stay longer, refrigerate them in a covered container and let them sit out for a short while before serving so the cake softens again.

Can I order cupcakes ahead and freeze them for a party?

It is better to order for a pickup date close to the party. Same-week orders close at 5 pm on Tuesday, and pickups in Hope are Thursday and Friday 4:30–8:30 pm and Saturday 11 am–2 pm. Freezing works well for leftover buttercream cupcakes, but it is not ideal for filled or fruit-topped flavors.
