Meet the Hope, Arkansas native behind every Strixly cupcake and party treat.

"I am a single mother of 3 beautiful young ladies: Jaidyn, Jordyn and Jaylei Simington. I have been baking since 2000 and launched Strixly Cupcakes on October 1, 2018. I am a God fearing woman who is determined to make life worth living, and what better way to enlighten the experience than with baking!"

Rachael's Baking Journey

Rachael is a native of Hope, Arkansas. A close friend from Dallas, Texas inspired her to start decorating cakes in 2000, and she spent the next 16 years creating treats for all kinds of occasions. In 2018 she launched Strixly Cupcakes and turned her focus to cupcakes and party treats. In her own words, she retired her cake pans, and her passion became creating delicious, beautiful and unique cupcakes, as well as other party treats.

What She Makes

Rachael bakes jumbo specialty cupcakes, half-dozen cupcakes, chocolate dipped strawberries, gourmet apples, cake pops, cakesicles and themed party packages. She also writes the practical guides on our blog together with the Strixly Cupcakes team.
